We love muffins! Nothing earth shattering to talk about here, but I have 3 go to recipes we use on repeat to make muffins at our house.

Muffins Make Mornings Better

I don’t know why we don’t always have muffins for breakfast. They are grab and go and delicious! Well, actually I do…two of these recipes have a ton of sugar, oops! But seriously, if I have muffins ready for breakfast the next day I am feeling on top of it (feeling ;)).

Baking with Littles

I usually make muffins on days my littles, or now little :(, do not have preschool. I LOVE to bake, and I want my kids to love to bake too, and for sure learn how. I also like that it is time spent together that actually helps me! But, baking together can be a learning experience…for all! Muffins are simple, and much more fool proof than other baking in my opinion. So, if they throw in extra vanilla or the flour flies everywhere, they are a bit more forgiving. I don’t think we have ever even messed up a batch.

We are for sure messy. TIP: It helps me going into it knowing it will be a mess, AND I can clean it all at the end. Trying to prevent a mess is an uphill battle. It’s all about how we look at things right!? I promise I never lose it when we bake together…

Anyways, we don’t mix it up much more than these three recipes!

Banana

I have had and used this recipe since college! It is what I would make growing up with my mom, and I believe it is from an old Betty Crocker cookbook, but honestly am not sure. I have found 3 bananas is superior to 2 and will only make it if i have three ripe and ready! Seriously! I experimented making healthy versions, and all were fine, but if I want banana bread…i just want the good stuff, and this is it! It was an easy recipe to manipulate though if you need or want to :).

Kodiak Muffins

I found this recipe from Home and Kind. I love following her and have found a lot of useful things through her account.

We buy this mix at Costco, and usually when it is on sale! We also use this mix to make pancakes most of the time. We usually use the egg and milk, but I have done it with water and it is still yummy in taste and texture. I like feeling good about serving more protein and whole grains :). And less guilty about adding chocolate chips!

Pumpkin

I found this recipe online in college, and have never looked for another! I love Jennifer Garner’s little cooking show and was so excited when she used this recipe, too. It’s just GOOD. Not good for you…just GOOD. I like to keep a few cans of pumpkin on hand to have these ready to make year round. I think these are especially nice to share with friends or neighbors. Something about the spices makes them so comforting. I’ve also messed around with making it healthier…and still occasionally use some whole wheat flour or half at least. But, you can’t beat the real deal.

Funny story…before this ice storm we had last week came, I asked my husband to grab something yummy for breakfast the next day at Costco. Your mind goes to the bakery, right? Like the danishes or muffins or croissants!? I was very excited to “cheat” on my current healthy goals. Well…he came home with Jimmy Dean sausage egg and cheese breakfast sandwiches lol. Just so funny to me. What would you have grabbed? Anyways, kids loved them, and I stayed healthy! Win win!

Tips

If your recipe calls for cooking oil, save that measuring cup to scoop the muffins into your pan- so much easier. This is a great job for little helpers too, and I like to not watch too closely and get everything cleaned up because it takes them a bit of time. If your recipe doesn’t have any oil, you can also spray a measuring cup!

I love the silicone baking pans I bought because I do not have to worry about them sticking! And, I don’t have to buy liners anymore!

It is my favorite to lay a pretty dishtowel over them on the stovetop. Everybody says muffins freeze wonderfully, but they only last a day or two at our house…

Recipes

Banana

  • 2 1/2 cups flour
  • 1 cup sugar
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 3 TBSP salad oil
  • 3/4 cup milk
  • 1 egg
  • 2-3 ripe bananas

350 degrees F, 24-27 for regular muffins

Kodiak

  • 3 ripe bananas
  • 3 eggs
  • 3 cups kodiak mix
  • 1 1/2 cups milk
  • splash of vanilla
  • chocolate chips

350 degrees F, 24-27 for regular muffins

Pumpkin

  • 1 15 oz. can pumpkin
  • 4 eggs
  • 1 cup vegetable oil
  • 2/3 cup water
  • 3 cups sugar
  • 3 1/2 cups flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 tsp ground cloves
  • 1/4 tsp ground ginger

350 degrees F, 24-27 for regular muffins
